The Preparation

Step 1

Heat 1/2 tsp ghee in a pan and roast the phool makhana on low heat until they become crunchy. Set aside a few for garnish.

Step 2

In the same pan, lightly toast the pumpkin seeds for 2 minutes until they pop slightly.

Step 3

In a high-speed blender, combine the roasted sattu, most of the roasted makhana, pumpkin seeds, and pitted dates.

Step 4

Add the Greek yogurt, chilled water (or coconut water for extra electrolytes), cardamom powder, fennel powder, and grated ginger.

Step 5

Blend until the mixture is completely smooth and frothy. If it is too thick, add a splash more water to reach your desired consistency.

Step 6

Pour the shake into two chilled tall glasses.

Step 7

Garnish with the reserved crunchy makhana, saffron strands, and a sprinkle of cardamom powder.

Step 8

Serve immediately for optimal muscle recovery post-workout.
