The Preparation
Step 1
Boil the soya chunks in salted water for 10 minutes until soft. Drain and squeeze out every drop of water thoroughly.
Step 2
Pulse the squeezed soya chunks in a food processor until they reach a coarse, minced consistency.
Step 3
In a large mixing bowl, combine the minced soya, crumbled paneer, ginger-garlic paste, green chilies, and all the dry spices (red chili powder, turmeric, garam masala, chaat masala, cumin powder, and salt).
Step 4
Add the sattu and chopped coriander. Knead the mixture well until it holds its shape. If too moist, add another tablespoon of sattu.
Step 5
Divide the mixture into equal portions. Take a portion and press it around a wooden or metal skewer to form a long, cylindrical kebab (seekh). Repeat for the rest.
Step 6
Heat a non-stick grill pan or tawa and brush it lightly with ghee.
Step 7
Place the kebabs on the pan and cook on medium heat, rotating them frequently so they brown evenly on all sides and develop a slight char.
Step 8
Remove from heat and serve hot with a squeeze of lemon and onion rings.
