The Preparation

Step 1

In a small bowl, soak the saffron strands in a tablespoon of warm milk for 10 minutes to release the color and aroma.

Step 2

In a high-speed blender, add the crumbled paneer, Greek yogurt, and the soaked peeled almonds. Blend until the mixture is completely smooth and creamy.

Step 3

Add the roasted peanut powder, jaggery (or honey), cardamom powder, nutmeg powder, and the saffron-infused milk into the blender.

Step 4

Add the rose water and the chilled skimmed milk. Pulse the blender again for 30-45 seconds until the 'Piyush' is frothy and well-combined.

Step 5

Check the consistency; if it is too thick, add a splash more of chilled milk and pulse briefly.

Step 6

Pour the mixture into two tall glasses. Garnish with crushed pistachios and a few extra saffron strands.

Step 7

Serve immediately while chilled as a potent post-workout muscle recovery drink.
