The Preparation

Step 1

Heat ghee in a heavy-bottomed non-stick kadhai or pan on medium-low flame.

Add the sattu powder and roast for 3-4 minutes, stirring constantly until it turns a shade darker and emits a nutty aroma.

Incorporate the steamed and mashed sprouted moong dal and the crumbled paneer into the pan. Sauté for another 3 minutes to combine the textures.

Slowly pour in the skimmed milk while whisking or stirring vigorously to ensure no lumps form.

Step 5

Add the jaggery powder (or stevia), cardamom powder, and the saffron-infused milk.

Step 6

Continue to cook on low heat, stirring continuously, until the mixture thickens and begins to pull away from the sides of the pan (halwa consistency).

Step 7

Stir in the rose water if using, and turn off the heat.

Step 8

Garnish with slivered almonds and serve warm as a high-protein post-workout treat or a healthy dessert.
