The Preparation

Step 1

Thoroughly rinse the soaked buckwheat groats under running water until the water runs clear.

Step 2

In a small pressure cooker or pot, add the buckwheat groats with 1.5 cups of water and a pinch of salt. Pressure cook for 1 whistle or boil for 10-12 minutes until tender but not mushy. Drain any excess water.

Step 3

Heat ghee in a non-stick pan over medium heat. Add the cumin seeds and let them splutter.

Step 4

Add the curry leaves, slit green chilies, and grated ginger. Sauté for 30 seconds until fragrant.

Step 5

Add the paneer cubes to the pan and sauté for 3-4 minutes until the edges turn golden brown.

Step 6

Lower the heat and stir in the turmeric powder. Add the cooked buckwheat groats and salt. Toss gently to ensure the paneer and buckwheat are well combined with the spices.

Step 7

Fold in the crushed roasted peanuts and cook for another 2 minutes on low heat to allow the flavors to meld.

Step 8

Turn off the heat, add the lemon juice, and garnish with fresh coriander.

Step 9
