The Preparation

Step 1

Heat 1/2 teaspoon of ghee in a non-stick pan over medium heat. Add the ginger-garlic paste and sauté for 30 seconds until fragrant.

Add the parboiled sprouted moth beans, turmeric powder, and a pinch of black salt. Sauté for 3-4 minutes to remove raw smell and add a slight crunch. Transfer to a large mixing bowl.

Step 3

In the same pan, add the remaining 1/2 teaspoon of ghee. Place the paneer cubes in a single layer and grill until they develop a golden-brown crust on at least two sides. Sprinkle a pinch of red chili powder over them during the last minute of grilling.

Step 4

Transfer the warm grilled paneer to the mixing bowl with the sprouts.

Step 5

Add the chopped onions, tomatoes, cucumber, and green chilies to the bowl.

Step 6

Add the roasted peanuts and the crushed makhana. The makhana provides a unique 'crouton' like texture and absorbs the spices.

Step 7

Season the mixture with roasted cumin powder, chaat masala, and black salt. Pour the lemon juice over the top.

Step 8

Toss the ingredients gently but thoroughly to ensure the spices are evenly distributed.

Step 9

Garnish with plenty of fresh coriander and serve immediately while the makhana and paneer are still crisp.
