The Preparation

Step 1

In a mixing bowl, toss the paneer cubes and rehydrated soya chunks with turmeric, half of the ground black pepper, and a pinch of salt. Let it sit for 10 minutes.

Step 2

Heat ghee in a heavy-bottomed pan or kadhai. Add cumin seeds and curry leaves; let them crackle and release their aroma.

Step 3

Add the sliced onions and sauté until they turn translucent and slightly golden. Stir in the ginger-garlic paste and cook for another 2 minutes until the raw smell disappears.

Step 4

Add the marinated paneer and soya chunks to the pan. Cook on medium-high heat for 6-8 minutes, stirring occasionally, until they develop a smoky, golden-brown exterior.

Step 5

Incorporate the steamed sprouted lobia and the chopped spinach into the pan. Stir well to combine.

Step 6

Sprinkle the remaining black pepper and garam masala over the mixture. Sauté for 3-4 minutes until the spinach has wilted and the spices are evenly coated.

Step 7

Turn off the heat, squeeze fresh lemon juice over the dish, and garnish with fresh coriander.

Step 8

Serve hot as a standalone high-protein meal or with a side of brown rice or ragi roti.
