The Preparation

Step 1

Heat half a tablespoon of ghee in a non-stick pan. Add the paneer cubes along with a pinch of turmeric and salt. Sauté until the edges are golden brown. Remove and set aside.

In the same pan, add the remaining ghee. Once hot, add mustard seeds and let them splutter.

Add the curry leaves, slit green chilies, and asafoetida. Sauté for 30 seconds until fragrant.

Step 4

Toss in the steamed sprouted moong dal. Add the remaining turmeric, garam masala, and salt. Stir well to coat the sprouts with the tempering.

Step 5

Add the sautéed paneer cubes and the fresh grated coconut. Mix gently to ensure the paneer doesn't break while absorbing the spices.

Step 6

Cook on low heat for 2-3 minutes to let the flavors meld together.

Step 7

Turn off the heat. Drizzle with lemon juice and garnish with crushed peanuts and fresh coriander.

Step 8

Serve warm as a high-protein, nutrient-dense post-workout recovery bowl.
